Libby’s Pure Pumpkin — Nearly 7 pounds of it!

We scored this gem at Swiss Village Bulk Foods in Sugarcreek, Ohio last weekend during a trip to visit Ohio’s Amish Country. I don’t know the price but we had a cart full of bulk foods and our bill was only $27. Stocking up, which also included purchasing an 8-pound bag of oatmeal, was totally worth it. But now, “What to do with 7 pounds of pumpkin?”

I have a few ideas in mind, namely measuring out and freezing some of it for:

Pumpkin Pie (several)

Pumpkin Gnocchi

Pumpkin for Oatmeal Topping

Homemade Pumpkin Spice Lattes?
